Bell Pepper, Tomato, Potato, Lentil and Cheese tray bake

This vegetarian dish is so good that even meat lovers will find it hard to realize the absence of meat. Very healthy and simply delicious. I'm not vegetarian, but I adore it anyway. People who are vegetarian though, often complain that there is little variety if one only has vegetables to work with, and that they eat repetitively but there's a whole world of delicious recipes out there if you're willing to experience with new ingredients.


INGRIDIENTS

- 3 Big Potatoes
-2 Bell Peppers (One Orange, One Red)
- 3 Medium Tomatoes
- 2 Medium Onions
- 300g Green Lentils
- Some Olive Oil
- Some Truffle Oil
- 3 Cloves of Garlic
- Good, melting goats cheese
- Salt & Pepper

INSTRUCTIONS
- Peel the potatoes, and boil in water with a little bit of salt until mostly cooked
- Place the lentils and 2,5 times as much water into a pot (2,5 x 300 = 750g), and cook covered on medium heat until all the water evaporates
- Chop the onions, bell peppers and Tomatoes up, keeping them all seperated from each other
- Put the onions and 2 squeezed garlick along with a little bit of olive oil into a frying pan, and after a few minutes add the bell peppers
- When the onions and peppers seem to be nearly ready add the tomatoes (the acid in them stops the cooking), and carry on cooking for 5 minutes)
- When the Potatoes are mostly cooked, mash them and add some truffle oil, and the remaining mashed up garlic clove
- Put everything in lairs into a baking dish, grate the cheese on top and bake under a 200 celsius grill for 10 mins

- Add Salt & Pepper to taste
